🥦. Microgreens are young vegetable greens. Not to be confused with sprouts. They fall somewhere in between a sprout and a baby plant. Sprouts do not have leaves.
🥦. Microgreens can be grown in many locations like windowsills, greenhouses or outdoors, so this makes them an easy project you can do at home. They can also be grown from a variety of seeds, such as broccoli, cauliflower, lettuce, carrot, spinach, radish, and arugula.
🥦. Why is this important? Microgreens, although small, are packed with nutrients. Their nutrient content is concentrated, which means they can contain similar or even higher amounts of vitamins and minerals and antioxidants than the mature plant. Nutrient contents vary but most tend to have potassium, iron, zinc, magnesium and copper. Because of their rich nutrient content, like mature vegetables, they are linked to reducing the risk of heart disease, Alzheimer’s, diabetes and certain cancers.
