protein breakfast skillet

~Protein Breakfast Skillet~

This breakfast gives you a great boost of protein at the start of your day.

 

~Ingredients~

1/2 tbsp. olive oil

1 small onion, chopped

1 clove garlic, chopped

1 sweet potato, chopped

1 tomato, diced

1/2 cup cooked black beans

2 eggs

Pinch of salt and pepper

Chopped cilantro

 

~Method~

 Heat oil and add onion and garlic. Cook for 1-2 minutes.

Add potato and beans. Cook for 10 minutes until potatoes are cooked.  Add tomatoes and cook for 2 more minutes.

While potatoes are cooking prepare eggs to your liking (I did scrambled with fresh herbs)

Add salt and pepper to potatoes. Serve eggs over potatoes. Top with cilantro. 💕
