Pumpkin oat flour muffins

Pumpkin Oat Flour Muffins 

I guess since everything if pumpkin pumpkin right now, this recipe will come in handy.  This recipe is gluten and diary free.  

~Ingredients~

1 cup pumpkin puree (you can use canned pumpkin)

1/4 unsweetened coconut milk yogurt (you can sub regular plain yogurt)  

2 eggs

1/3 cup maple syrup 

1 tsp vanilla

2 cups gluten free oat flour

1/2 teaspoon baking soda

1 teaspoon baking powder 

1 teaspoon pumpkin pie spice

1/2 teaspoon salt 

You can add chocolate chips or top with pumpkin seeds or both :) 


~Directions~

Preheat oven to 350 degrees.  Add all ingredients into a mixing bowl and  mix with a mixer.  Add to lined muffin tins.  Bake about 18 minutes, or until toothpick comes out with just a couple crumbs.  Makes about 12 muffins.
