chia-berry yogurt parfait

Ingredients

•1 cup frozen fruit ( I used mango and berries)

•1 Tbsp @ maple syrup

•Juice of one lemon

•1 Tbsp chia seeds

•1 cup yogurt of choice (I like plain coconut yogurt)

•Granola for topping (homemade stove top recipe, will share recipe in another post).

 

~Method~

In a medium sauce pan, over low to medium, heat add fruit, maple syrup and lemon juice.  Bring mixture to a boil, stirring constantly, reduce heat to low and simmer for 3 minutes.

Remove pan from heat and stir in chia seeds.  Allow mixture to thicken. 

Put some of the mixture in a bowl, top with yogurt and granola.  Enjoy for breakfast, lunch, snack or dessert 😊💕 

*The fruit mixture can be stored in the fridge in an air tight container for up to 5  days. You can just add throughout the week to your yogurt and add granola for a quick breakfast.  💕
