lentil and cabbage wraps

Ingredients

1 tbsp. olive or coconut oil

1 medium purple onion, chopped

1 medium tomato, chopped

Grated broccoli stalks (optional, but such a great way to use unused broccoli stalks)

2 cups shredded cabbage

1/2 cup shredded carrots

3 cups pre cooked lentils

2 tsp. Turmeric powder

2 tsp. Chili powder

Salt and pepper to taste

 

Method

In a skillet add onions, cabbage, carrots and broccoli stalks and cooked until softened.  Add lentils, stir. Add spices. Stir. Cook for a few more minutes.  Add to wrap of choice and enjoy. 💕
