curried chick pea tacos

Curried Chick Pea Tacos

Ingredients: 

1 tablespoon olive oil

2 teaspoons yellow curry powder

1 medium onion, chopped

1 medium tomato, chopped 

1 inch ginger root, grated 

1 head cauliflower 

1 1/2 cups cooked chick peas

1/2 cup vegetable stock 

1/2 cilantro, chopped 

salt and pepper to taste 

1 bay leaf, optional  

Heat oil on medium heat, add curry powder and onion.  

Cook for a few seconds.  

Add ginger, chickpea, tomatoes, cauliflower, vegetable stock, salt,

 pepper and bay leaf.  

Simmer until cauliflower is cooked and top with cilantro. 

Serve with corn tortilla, homemade salsa, salad greens and corn.
