🍠Sweet v’s Savory Giant Sweet Potato Wedges🍠

You really should try this, especially if you like sweet potatoes! AND especially because sweet potatoes are packed with:


Vitamin A

Vitamin C

Vitamin B5 and B6

Manganese 

Potassium 

Copper

So….. here’s the plan:

Giant Sweet Potato Wedges

Slice potatoes in about 1/4 inch thick slices (this is the hardest part, be careful).  Rub lightly with olive oil and a little sprinkle of salt.  Place on a baking try lined with parchment paper.  Bake for about 30 mins at 400 degrees.  I kept checking on them and flipping them to try to get the edges crispy.  They won’t get crispy like toast but the outside gets golden brown.  Remove from oven and top with toppings of choice. 

For the sweet: I added sunflower seed butter, blueberries and pumpkin seeds.

For the savory: I added stir fried greens, topped with tahini and a sprinkle of salt.

Both very yummy.  This honestly can be served as breakfast, lunch or dinner!
