gluten free pumpkin spiced pancakes
🥞Gluten Free Pumpkin Spiced Pancakes
Ingredients
2 cups gluten free flour (I used Bob’s Red Mills, its a great sub for regular all purpose flour)
3 teaspoons baking powder
1 teaspoons baking soda
2 teaspoons pumpkin pie spice
Pinch of salt
2-3 tablespoons coconut sugar (or regular)
1 cup pumpkin puree
1 egg, beaten
1 1/2 cups oat milk (or milk of choice)
2 tablespoons coconut oil (melted)
2 teaspoons vanilla extract
In a large bowl, combine all dry ingredients together. In another large bowl combine all wet ingredients. Stir dry ingredients into wet ingredients and mix until combined well.
Heat griddle or frying pan with a little coconut oil. Scoop batter onto the griddle, about 1/4 cup for each. When pancakes start to bubble flip and cook until done.
Serve with maple syrup and fresh berries.
If mixture is too dry or thick add more ad a bit more milk.
*You may substitute with regular flour, I have never tried it this way but I am sure it would work.
*You can also substitute with another oil or butter.
